Asian spaghetti and Meatballs

I just want to say welcome to all of the readers over at Almost Frugal Food! “Friday is for Food” is such a fun idea and I can’t wait to share this recipe with you. To get an idea of my view and love for food, please check out my posts on the elusive fried chicken and the return of the casserole. I’m a bit quirky, but my readers love me that way, so I continue to be a weird bird. Welcome to my world!


I developed this recipe when I longed for lo mein but didn’t long for the tummy ache that ensues when I eat it from my local Chinese place. Oh yeah, and the money I would have to give up. It’s a simple dish but is elegant enough to serve to friends, and fast enough to make on a wednesday night. That’s how we roll here on 4 hats. I hope you all enjoy it.

Ingredients:
1 to 1 1/2 pounds of ground meat(I used beef but turkey would work too)
1 pound spaghetti, cooked al dente
2 cups teriyaki sauce(or just make this recipe for a homemade sauce)
1 cup bread crumbs
2 carrots, shredded(I use my veggie peeler to shred mine)
1 cup scallions, chopped(yellow onion will do in a pinch)

Place ground meat into a medium sized bowl.
Pour 1 and a half cups of the teriyaki sauce, 3/4th cups of the onions and all of the bread crumbs on top of ground meat.
Mix all ingredients together, with you hands! It’s the best way to get the flavors evenly distributed.
Place your largest skillet on a medium heat and spray with cooking oil spray, or very lightly coat with vegetable oil.
While waiting for pan to heat up, turn half of the meat mixture into meatballs. I made golf ball sized balls for quick cooking.
Once done with first batch of meatballs, place them into pan. Allow them to brown on first side for about 3 minutes, then turn. Cook another 2 minutes on other side, transfer to a plate and cook the second batch.
After the second batch is cooked, remove to plate with other meatballs.
Throw carrots and pasta into pan, along with the last 1/2 cup of sauce. Toss until everything is coated, turn off heat, place meatballs back into pan and sprinkle the rest of the onions on top.
It’s now ready to serve! If you have a big family, you can just place the large skillet on the table and have them go at it. Or, you can make it all cutesy like I did above. It’s your prerogative, man!

Who you callin’ it’s your peragative, man? I’m a grocery hound mama! And Sonny Boy’s (unofficial) aunt, in case you forgot.
This asian spaghetti and meatballs recipe sounds delish. Maybe Grocery Boy can bring me home some free ground beef or turkey. There”s an idea! Mahalo nui loa for your blog, Amiyrah. I don’t have time to do one, but I sure love yours!

That looks good. You’ve given me a new recipe for next month’s menu. Only I’ll be substituting goat for beef since that is what we have.
