With the holiday today, I feel like we are going to be off by a day on EVERYTHING, including dinners. But, I do have leftover chicken in the fridge from rosemary chicken last week, so that will start the week off with a soup. We have a bag of frozen cut up collard greens in the freezer, so I’ll prepare that for our veggie of the week. I want to try a new recipe this week too, so we’ll see how that goes.
Monday: Mexican corn soup with beer bread
Tuesday: Beef stroganoff with noodles and collard greens
Wednesday: mix-n-match kidney bean soup with cornbread
Thursday: Chicken adobo with rice and collard greens
Friday: Slow cooker baked ravioli
Saturday: Free day! Gonna look at leftovers and make a meal on the fly!
Sunday: Off to my parents’ for another football-filled Sunday!
Dessert of the week- sweet potato cheesecake
