I’ve been trying to get back into the groove of meal planning, and I’m surprised to say that it hasn’t been that easy. I’m promising myself that this week I’ll at least do 4 days straight of planned meals. I even prepped some veggies and potatoes to make sure I can stay on point with this. Here’s what I have planned:
Monday: low calorie Pasta Primavera Alfredo (recipe coming soon!)
Tuesday: Roasted Chicken leg quarters with roasted potatoes and carrot “spaghetti”
Wednesday: Spaghetti with meat sauce and side salad
Thursday: Beans and Cornbread (using turkey bacon)
Friday: Pizza night!
Saturday: Using a Groupon and taking the family out for dinner
Sunday: Easter! Having Monkey bread and more for breakfast and dinner at my parents’ house
