The Duchess’s Birthday (Pan)Cake

Now you know that I couldn’t just let Sonny have a birthday (pan)cake all by his lonesome. His nutella birthday cake with caramelized bananas was to die for, but when the Duchess had her big day, I decided to do something a little different while still using De Wafelbakkers pancakes as the base.


The little girl loves blueberries. I mean, really loves. She even mistakes concord grapes for big giant “boo-berries” and constantly tells me that i’m wrong when I repeatedly break the news to her that they’re not. She’s also a big fan of yogurt. What’s her favorite? Greek with boo-berries. Natch. So, I decided to create a blue-tastic cake just for her.


The pancakes were made according to the instructions and I let them cool for about 2 minutes. In between the layers is blueberry yogurt. I used the kind with the blueberry flavoring already in it, since that what was on sale this past weekend. I dolloped a bit of the yogurt on top of the cake and sprinkled some lovely blueberries. As you can imagine, it was a hit. 


So, if you’re a health nut like my little munchkin, this birthday (pan)cake might be just right for you. Don’t like blueberries? Sliced peaches or strawberries would work just as perfectly. Now go forth and eat some pancakes!
