I have a family that loves bananas. I’ve encountered quite a few folks that really do not, but we’ll eat up all the bananas that they don’t want. It’s fine with us. Since there is such a big love of this fabulous fruit in our home, I’m constantly thinking up new ways to ingest it. A few years ago, we discovered banana chips at Trader Joe’s, and I knew that we could use these in something amazing.

Besides sharing them as an afternoon snack, I learned that they crumbled perfectly in the food processor. From there, we used them to top cakes, milkshakes, smoothies, ice cream and more. Then, it hit me: krispie treats. The clouds parted, the sun came out, and I went to work on making these amazing treats.

With the addition of peanut butter, these are beyond delectable. The kids have them with a glass of almond or soy milk after school, while I chew them up with warm milk or hot chocolate before I wind down for the night. My husband? He’ll eat them anytime, even for breakfast. I’m dying to know when you’ll find the perfect moment to have a bite. Be sure to eat a few of them a few times to find out your favorite time of day.

Just a note: I make our kris pie treats via the microwave, but you can make them on the stove just as easily.

Banana Peanut Butter Krispies

4 tablespoons butter, room temperature
1 bag of marshmallows, regular or miniature
1/4 cup peanut butter
1/2 cup dried banana chips
6 cups rice krispies

Instructions

Place dried banana chips in a food processor and pulverize. Place half of the chips in a separate bowl.
Place the butter in a large microwave safe bowl. Microwave on high for 1 minute, or until the butter is fully melted.
Once butter is melted, add marshmallows and toss to coat with the butter. Place back in the microwave for another minute, or until the marshmallows are large, fluffy and puffing over the bowl. Puffing is a technical word, I promise you.
Take marshmallows out of the microwave and stir in the peanut butter.
Place 6 cups of rice krispies, and the half of the chips in the food processor in the bowl  with the marshmallow mixture. Fold together quickly with a lightly greased spatula.
Place the mixture in a lightly greased 9×13 pan, and quickly sprinkle the rest of the pulverized banana chips on top. Let cool 30 minutes. Cut up and enjoy.

    Thanks for your recreativity! Nothing like peanut butter and bananas! This is probably a good way for me to use the bananas that become overripe in my household no matter how green I buy them– incorporate them in the marshmallow mixture, particularly if I don’t have the banana chips on hand.

    After you press them into the pan, sprinkle chocolate chips on top. Put into a warm oven for a few minutes to melt/soften the chocolate. Spread around with the back of a spoon. Let cool before cutting.
