Lemon Meringue Pie is one of my favorite desserts in the whole wide world. I love the airy meringue topping, and the tartness of the lemon filling. This may be why I will stay up at night and eat spoonfuls of lemon curd from time to time.

One night, I was rummaging through the kitchen, and decided that I wanted to take my midnight snack to the next level. This is how lemon meringue bites were invented. The ritz crackers were readily available, and we happened to have marshmallow cream on deck. It was go time.

These are very easy to make. The best part is that you can make them 3 different ways. Check it out:

The basic bite starts with 2 crackers and a dollop of both spreads.

    Honey Ritz needs to put you on the team! These look delicious and I don’t think I know anyone that can do more with a Ritz cracker than you! I already know that lemon cur with marshmallow creme is heaven. Genius!

    Oh boy do these ever look yummy. I’ve eaten graham cracker with marshmallow cream and peanut butter, but I’ve never tried lemon curd and marshmallow cream. This is going on my list to get at the store. Yum!
