With the recent awesome sales of cereal at pretty much every store from here to Timbuktu, my online buddies and I have been trying to figure out how the heck we are going to use it all up! I decided to tackle this “problem” by finding and trying recipes that uses cereal as a main ingredient and thinking of ways to use it as an ingredient in our lunches and dinners and (hot) breakfasts. Here are a few ideas I found and discovered:
Want that panko crumb texture on your shrimp or chicken? Try puffed rice! Rice Krispies is a perfect substitute for that Asian ingredient: just put some in the blender or food processor and pulse a few times. If you like it really crunchy, push that pulse button about 2 times or don’t break them down at all! Sonny Boy loves when I put this on his baked chicken fingers instead of the usual bread crumbs.
Speaking of puffed rice, roll those slices of french toast in it before you put it on the griddle. The restaurant I used to manage had this “crunchy” french toast on the menu and it was a breakfast best seller.
Have lots of raisin bran or honey bunches of oats? Make muffins out of them! You can use the whole box and keep the leftover batter in the fridge for about 6 weeks. Check out this recipe I found: Raisin Bran Muffins
Want a granola bar type treat but don’t have rolled oats? Try using toasted oats instead. I found this recipe and have used it for DH. Its a great energy booster and tastes yummy with the suggestions I made: Toasted oats cereal bar
No graham crackers but need a crust for that cheesecake you wanna make? Use honey toasted oats. Honey Nut cheerios work great for this and the crust is a great substitute to the graham cracker one. Try this recipe: Pie crust from cereal
Hopefully this will help some of my e-buddies figure out what to do with that extra cereal. It sure was fun trying these out. Give one (or two) recipes a try and tell me what you think.
