This week includes another military weekend for me so I’m hoping there will be enough leftovers for DH to survive the weekend and for me to not have to leave a slow cooker meal for Hubby to turn on Sunday before I get home. It should work out….if not, we’ll be having pasta tossed in garlic butter and salad for Sunday dinner lol. I also was lucky enough to find a semi boneless leg of lamb for 1.99 a pound at the store yesterday, so I will be using that in 2 of the meals this week. Its all natural, free range lamb! I totally hit the jackpot with that one. Here’s my plan:
Monday: Marinated Leg of Lamb with roasted potatoes and carrots
Tuesday: Lisa’s Easy baked ziti(making it in the slow cooker) with side salad and garlic bread
Wednesday: sweet and sour chicken with rice
Thursday: enchilada bake(with lamb instead of beef….hope it turns out ok)
Friday: potato and onion fritatta with side salad
Saturday: Mom’s away….Hubby and Sonny will play…and eat whats in the fridge lol.
Sunday: Mom’s back and better than ever….another leftovers night
