Have oodles of cereal and don’t know what to do with it all? Here’s a recipe I found for raisin bran muffins(its also a great one for cereal like Honey Bunches of Oats):
1 15 oz box raisin bran cereal
3 cups sugar
5 cups all purpose flour
5 tsp baking soda
2 tsp salt
1 cup oil
4 eggs, beaten
1 quart buttermilk (or yogurt or watered-down sour cream)
Mix together dry ingredients in a large bowl.
Add the oil, eggs, and buttermilk; mix until dry ingredients are wet.
Store in a closed container, in the refrigerator, for up to 6 weeks.
When ready to bake, fill greased muffin pans, or line with cupcake liners.
Bake in a 425 degree oven for 18 minutes.
Makes 5 to 6 dozen regular size muffins or 3 dozen large muffins.
