Yes, I know its tuesday, but the holiday yesterday threw me for a loop and I realized I didn’t post a meal plan! I had to think up a quick one last night and this is what a came up with:
Monday: BBQ food- FREE!
Tuesday: chicken teriyaki stovetop casserole(see below)
Wednesday: Hot dogs with beans and side salad
Thursday: spaghetti night(with ground turkey)- we didn’t get to have it last week
Friday: Beefy enchilada bake with side salad
Saturday: gnocchi with tomato cream sauce
Sunday: slow cooker meatball stroganoff with whole wheat pasta and corn
The stovetop casserole for tuesday’s meal is just the leftover chicken, broccoli, and brown butter rice from the night I cooked for MIL. I chopped the chicken and broccoli up and mixed it with the rice last night. I will but some leftover teriyaki sauce in the bowl a 15 minutes before I warm it all up in my skillet ont the stove. And then viola! stovetop casserole. If you haven’t noticed, I’m only using the oven once this week. Its getting hotter so I will now try to cut down on using the oven. During the summer months, if I do need to use the oven, I will use it at night and make the meal for the next day at that time. Then the next day, we just warm it up in the microwave. We will also be having a lot of no-bake desserts(yogurt pie, cereal bars, etc).
