Today, MIL finally came into town and it was a fun, frugal day! I had breakfast waiting for her when she got here around 9:30am. Turkey kielbasa, scrambled eggs, carrot cake muffins, and homemade biscuits. She was so impressed! I also made dinner. We had chicken that marinated overnight in Italian dressing, brown butter rice(browned white rice in brown butter and then cooked it in my rice cooker), and steamed broccoli. I also saved some of the yeast rolls I made a few weeks ago( I put them in the freezer) and added those to the meal. She took one bite of the chicken and was in heaven lol. Such an easy meal and she totally cleaned her plate! I figured we saved so much by eating here today that I asked DH if we could treat ourselves and Mom to some Rita’s Italian ice and frozen custard. Plus, I had coupons for it :o). She really loved the custard and said that she was totally full from being fed all day lol.
Tomorrow should be interesting…..I don’t know what we are doing for lunch after church but Mom wants to take us to the mall and get me a belated mother’s day present. Maybe I’ll just tell her to treat us to lunch and we’ll call it even lol. Tomorrow night, Hubby, Sonny Boy and I have to go to a sweet 16 so our dinner is taken care of but I’ll have to see if Mom wants me to cook her up something or if she would like to have the leftovers from today. So far, this is turning out to be a great visit!
