I adapted a few recipes that I read to create this one. It is quite tasty grilled but you can either make it on the stove with a grill pan or put in a 350 degree oven for about 20 minutes or until the juices run clear. Pair this with tzatziki sauce, a yummy noodle side dish and some veggies and it’s an instant Greek night!
4 skinless boneless chicken breasts
1/2 cup olive oil(extra virgin, if ya got it)
1 lemon, juiced
2 teaspoons crushed garlic
1 teaspoon dried oregano
1 teaspoon dried mint(optional)
2 teaspoons salt
1 and 1/2 teaspoons black pepper
1/3 teaspoon paprika
Combine all ingredients except chicken in large bowl. Whisk together for 30 seconds to one minute. Cut 3 slits into each chicken breast….this will let the marinade get deep into the meat. Add meat to marinade, and let sit over night. You don’t have to let it sit overnight if you don’t want, a few hours should be fine, but you want that real yummy flavor to penetrate….. don’tcha? Then its agreed….overnight it is. To make in the oven, place on a cookie sheet, covered in foil, and bake for about 20 minutes. Opa!
