I got lucky last week when it came to my meal plan…..because I made the big meals in the beginning of the week, we had enough food to last us on the days I was supposed to make something new but totally didn’t feel like it lol. It was hot and I was tired after doing all of my school work for the next two weeks. So, I didn’t make 2 of the meals from last week’s meal plan. Do you know what that means? That means I get to put them on this week’s meal plan! Whoo Hoo! Two “free pass” meals that I already have prepped and ready to be made. I will be doing the same type of prep I did last week by making anything that needs to be made in the oven on Monday so I don’t have to use it again until next week, or actually sunday. Since Sunday is Father’s day, I’m making Hubby’s favorite meal, Lasagna. If only I could make it in the microwave :oP
Monday: Greek chicken with tzatziki sauce, pasta risotto and broccoli
Tuesday: Turkey fried rice
Wednesday: Loose meat sandwiches and cucumber salad
Thursday: Tuna cakes and grits; side salad
Friday: Fried mustard catfish with braised carrots
Saturday: Chicken stove top casserole served over rice
Sunday: NY strip steak, boiled shrimp and side salad (yay! Father’s day!)
Dessert for the week: key lime cheesecake
I will post the recipes for the greek chicken,tzatziki, loose meat sammies, tuna cakes, and key lime cheesecake(with pictures) this week so stay tuned!
