Because we are leaving for Ohio on Thursday afternoon, I have quite the little meal plan for the week. Monday’s meal will be especially fun for me since I love pastitsio but haven’t made it at home yet. I’ve eaten a few and kind of figured it out so I get to be my creative self in the kitchen again. Also, we get to have breakfast for dinner, which is my all time favorite meal. The fried chicken will play double duty as dinner for Wednesday and our snack for the trip to Ohio. So, here it goes:
Monday: vegetarian pastitsio with side salad and tzatziki sauce dressing
Tuesday: strawberry pancakes, baked maple turkey bacon and roasted home fries
Wednesday: Fried chicken with steamed broccoli and rice pilaf
Thursday through Sunday: vacation in Ohio! I miss my in-laws…..I really do!
