All within this week I have Sonny Boy’s Birthday, my best friend’s wake and funeral, and replenishing my fridge with food since we ate up everything before we left for OH. One good thing is that Hubby’s grandmother made us a roast and froze it so we could bring it back. We will be taking advantage of that this week. I’m not quite sure if we will follow this meal plan this week but I will try my hardest.
Monday: Sonny Boy’s b-day! He has requested “pee-za” and also has told me “mama, I need chalk-late” so we will be ordering pizza and mama is making Pioneer woman’s famous choco cake but in cupcake form! Will post pictures later….
Tuesday: Slow cooker fajitas (we have the wake this day)
Wednesday: mustard thyme catfish with wild rice and side salad(funeral in the morning so we’ll need a good meal that night)
Thursday: Asian shredded beef and rice in lettuce cups
Friday: Tuna fish cakes and grits with braised carrots
Sunday: Slow cooker Mongolian beef
