This is something that I constantly make in our house. Hubby loves it and has a spoonful of it when he gets a craving so something sweet and sour. I love to spread it over toast for breakfast or mix it with whip cream for a creamy tart treat. The best part is that it will stay in the fridge in a glass jar for up to 3 weeks. The recipe was originally a Paula Deen recipe just for lemon curd but since limes are readily available on sale, I had to adapt it for limes as well.
3 large lemons(or 5 limes), zested and juiced
1 cup sugar
4 eggs
1/2 cup butter, melted
Put zest and sugar in food processor(or blender) and process until combined. Add juice and eggs and process until smooth. Slowly add butter to mixture. Place mixture in double boiler and cook 5 minutes until thick and sugar has dissolved.
