This peachy chicken recipe is easy, delicious, and a great twist on the original baked chicken recipe.

Delicious peachy chicken. I finally got to make this again tonight and I now remember why I loved it so much! A recipe that I spotted in a magazine before I was even a wife, peachy chicken has bought so much delectable joy to my belly these past few years. The combination of the peaches, the vinegar and spicy ginger and black pepper will have you feeling joy too. This meal is incredibly easy to make, and can be cooked in the oven, or the slow cooker. This can also be prepped ahead of time. You can combine all of the ingredients, place in a 9×13 casserole dish, cover, and bake off when you are ready. Peachy Chicken

This peachy chicken recipe is easy, delicious, and a great twist on the original baked chicken recipe.

4 skinless boneless chicken breasts (or thighs, if you’re sassy like that)
2 peaches, peeled, pitted and sliced
1 tablespoon apple cider vinegar
1/2 cup brown sugar
1/4 tsp ground ginger
a heavy pinch of black pepper

Instructions:

Preheat oven to 350 degrees.
Place the chicken in an 8×8 or even a 9×13 casserole dish, and top with sliced peaches. Mix the brown sugar, ginger, and black pepper in a small bowl.
Top the peaches and chicken with the mixture evenly and drizzle the apple cider vinegar over the brown sugar mixture.
Bake in oven for 30 minutes or until the juices in the chicken run clear.

Slow cooker instructions: Same steps as above but add 1/4th cup water to the pot to prevent the chicken from scorching. Place on low for 8 hours, or on high for 5 to 6 hours.

    yes, it will work great with drained canned peaches. Thats what i used the last time I made it before this recent time.

    This was great! My DH loved it b/c he loves white meat. My only thing is that I like juicier meat so I need to find a way to make the sauce a little bit more in bulk so I can enjoy it more, but GREAT recipe. I’m making it again this weekend!

    made it this past weekend. used chicken legs instead, kept in the oven longer, they came out great. the only thing i did differently is use a lot more peaches, it was wonderful. thanks

    I have good news and bad news about my attempt with the peachy chicken. Turns out that hubby doesn’t like peaches. In fact he had never even had them before last night. But he did scrap them off and just eat the chicken. He did like the way the chicken turned out. I loved it. So nice and sweet, when you make chicken as much as I do something different is always a good thing.

    Hubby has asked that instead of peaches next time that I use apples. As much as it didn’t work out like I wanted I declare this a success. You found a way to get my hyper carnivore hubby to eat more fruit.

    Served this last night – gives a new, very nice, “out of the ordinary” taste to the chicken. I would like the sauce to be thicker and stick to the meat (ala gravy) Has anyone tried adding corn starch or other thickener? I did the oven method and 30 minutes baking time was right-on.

      I used more peaches and mixed it altogether ( I cube my chicken) and I add 1 tablespoon of cornstarch. It turned out great

    I dont think anyone tried the corn starch but a lot of the ladies did add more peaches than what the recipe states and I definitely recommend that.
