This week is going to be too yummy! I’m very excited about trying 2 new recipes: falafels(will post the recipe on friday) and PW’s yogurt chicken. I haven’t had a falafel in so long and I know with my tzatziki sauce, its going to be so gooood! PW’s chicken looks good too and I’m glad that I stocked up on Greek yogurt a few weeks ago when it was on sale. We have a bag of frozen strawberries to use up, so stewed strawberries and dumplings are in order. Organizing Junkie wants us to make (or link to) one of our family favorite meals this week, so I decided to make our never- fail potato soup on Sunday. Since we are going to have all the elements of the soup during the week, its a perfect choice!
Monday: meatloaf with mashed potatoes and corn
Tuesday: falafel wraps with tzatziki sauce
Wednesday: beef lo mein with side salad
Thursday: Pioneer Woman’s crispy yogurt chicken with braised carrots and rosemary potato wedges
Friday: caramelized onion and beef topping pizza
Saturday: Off to Six Flags Great Adventure! Whoo Hoo!
Sunday: Lazy mom’s potato soup with shrimp (family favorite!)
Edit: We decided to have PW’s chicken tuesday night and it was sooooo good! I used skinless chicken thighs and boneless skinless chicken breasts and it was heavenly! The chicken breasts actually tasted better with this recipe. Hubby totally cleaned his plate and asked “is this your recipe?” I wish I could have said yes lol.
