Here’s the first of my many holiday baking recipes! This one is so stupid easy but gobbled up in no time. It reminds me of “puppy chow” or “muddy munch”….you know, the chex mix where you use powdered sugar and chocolate. Yum! I found this recipe a few years back and changed it around just a bit(I use kettle corn popcorn instead of regular and I added peanut butter). I hope you all enjoy it!
Chocolate Popcorn
1 bag microwave kettle corn popcorn
1/2 a bag chocolate chips(or one big bar of your favorite chocolate)
1 tbls peanut butter
Grease a cookie sheet(or cover it with wax paper) and set aside.
Pop the popcorn in the microwave and place in a large bowl making sure to take out any kernels that didn’t pop.
Place chocolate and peanut butter in a microwave-safe bowl, microwave in 15 second increments, for about one minute, stirring until smooth.
Pour over popcorn & stir.
Spread on cookie sheet and cool(I put mine in the fridge because I’m impatient). Break into pieces and store in airtight container.
*I’ve done this with white chocolate, toffee chips, and butterscotch chips. It’s delicious any way you make it!
Now open wide……

I wonder how regular popcorn would work – does it get too soggy with the chocolate?

I’ve never tried it with popping corn but i’m sure that it would be fine. Give it a try. You’ll only be losing a few pennies(popping corn is super cheap!) if it doesn’t work out. And stop back here to let us know the results :o)

I only had regular popcorn so, I tried it. (using my free chocolate of course)My kids love it! Ok, I do too but, since I am trying to diet….nobody saw me try it 🙂
