Cut out Sugar Cookies

Well, I sure am on the cookie train now! I made peanut butter and jelly thumbprints last night(recipe to be posted later) to add to Hubby’s platter he was taking to work. While they were in the oven, he peaked around the corner of the kitchen, gave a quite a pouty face and asked “are you going to make the cut out cookies with the peppermint sprinkled on top? I really like those.” He cracks me up. I never even thought to make those this year, but now they have been requested, so I must oblige. Here’s my favorite cut out sugar cookie recipe:

Edit: I just had a friend over on the MSN boards ask for a sugar cookie recipe to make with her kiddos, so this is perfect timing!

4 cups sifted flour
2 eggs
2 cups white sugar
1 cup shortening(you can use butter, but the cookies will spread a bit more)
4oz cream cheese, at room temp.
1/4 cup milk
4 tsp baking powder
2 tsp vanilla
1/2 tsp salt

Cream shortening, vanilla and sugar together in your stand mixer(or a really big bowl).
Add cream cheese and continue to cream.
Beat the eggs in a separate bowl and add to the creaming mixture.
Add baking powder and salt to sifted flour. Add flour mixture a little at a time to cream mixture while the mixer is on low speed.
Once all the flour is added, add milk and mix on medium speed for a few seconds.
Chill for 15 to 30 minutes before using.

You can drop these and make regular sugar cookies, or roll it out once chilled and use for cut out cookies for Santa(or Daddy, or Grandpa, or Uncle Larry, etc.).
Last year, I cut them into different sized circles and made sugar cookie snowmen. Hmmm….I think sonny boy would enjoy that again. Time to make the cookies!
