Hubby loves peanut butter cookies. I’m not a big fan, but I do love a good peanut butter and jelly sandwich. Since we seem to always have peanut butter and jelly in the house(even before we started stockpiling), I knew I had to put the two together in a cookie. This is one of a few PB and J cookie recipes I have. I think I got the basic peanut butter cookie recipe from a Paula Deen episode(I was low on flour but wanted to bake some cookies) and of course, everyone knows how to make thumbprint cookies. A super-easy recipe that kids(and the kid in you) will enjoy!
1 Egg
1 cup Peanut Butter
1 cup Sugar
1 jar jelly(grape, strawberry and raspberry are all yummy)
Mix all ingredients, except jelly, in a bowl. Roll into 1 inch balls and place on a greased cookie sheet. Take your thumb or a teaspoon and press into the ball. Fill the cavity with jelly. Place in a 350 degree oven for 12 minutes. Once done in the oven, let them cool right on the cookie sheet. Moving them too early will cause them to fall apart. Grab a tall glass, fill with milk(yes, soy is fine) and gobble up as many cookies as you can!
