Cheap Eats: Potatoes and Onions

Have you noticed that potatoes and onions seem to always be on the cheap side at the stores? For the price, you really can get your money’s worth in meals. I recently noticed that we’ve been having this combination as a side dish readily in the past few weeks, and when factoring the price and the shelf life, we really are getting our money’s worth! Here are a few things I’ve been doing with them:

How To Stretch Your Potatoes and Onions

1. Cube up 6 potatoes and thinly slice one onion. Pan fry in a large skillet for abotu 5 minutes, sprinkle with salt and pepper, and cover with a lid. Cook on medium heat for another 5 ot 7 minutes, stirring occasionally, until the potatoes are cooked through. We ended up using this as a side dish for a dinner, and then a few days later as home fries for our Saturday breakfast.

2. Thinly slice potatoes and a few onions, toss with salt, pepper and paprika, then alternately layer in a casserole dish. Pour half cup chicken stock over the goodness and bake in a 350 degree oven for 30 minutes.

3. Just looking to use the onions? Slice 3 pounds of them(you gonna cry! you gonna cry!), put them in your slow cooker with a stick of butter or margarine. Cook on low for 12 to 14 hours and ta-da! Caramelized onions! I’ve done this so many times now. We use it on our pizzas, and this week, we’ll use them for our mashed potato buffet. The best part is that they can last up to a month in the back of your fridge.

4. Keep it simple: Cut the onion in fours, cut the potatoes in fours, rub with kosher salt and olive oil and roast at 375 to 400 degrees. If you place the pan in the oven and let it warm up before putting the veggies on it, they won’t stick. Hubby could sit and eat roasted onions all by themselves. And, well, I could too.

    I try not to eat a lot of potatoes (starchy and I gain weight when I eat potatoes), but I use onions in almost everything. I just made a soup on sunday and put in a couple of onions. I also used up my celery and carrots. When I do make potatoes, I put onions and potatoes in the pan and fry, when it is almost done, I add some kind of precooked ham or sausage and eggs and cook all that goodness together until the ham is warm and the eggs are done. Deliciousness!

    Here’s my easy potato & onion recipe. Take as many potatoes are you want to cook, cut them in half lengthwise(or whichever way to get them as thin as possible).
    Slice an onion into slices(leave the slices intact).Cover your baking pan with foil & spray very lightly with spray oil. Place the onion slices on the pan. Put a pat of butter and sprinkle sea salt on each onion slice. Place the potato halves, 1 on each onion slice. Roast in a 400 degree oven until done….about 30-40 min.
    You can serve each potato/onion stack or toss all together in a bowl(sometimes I cut the potatoes once more if I put them together in the bowl).

    My family goes wild for potatoes cooked this way.

    I thinly slice a potato, drizzle with olive oil, salt, and whatever other seasoning I feel like that day, then layer on a sprayed cookie sheet and bake at 350 until desired doneness. My husband and I love to have some crunchy like chips and some still on the soft side.

    Onion soup! One of my favs for the winter time and of course, I use onions in most of my cooking. I do try to use potatoes sparingly because I love it too much and I can eat alot and gain weight even more but there are so many things that you can do with them. Pirogi is obvious one for me since it’s my famiy food, but mashed and scaloped are good too (no cheese though).

    Amiyrah — two ways we do potato & oninons….(1) thinly slice potatoes & onions, put in skillet with olive oil and sautee until soft. Sprinkle with salt & pepper. So easy and tasty. (2) thinly slice potatoes & onions (& green peppers), toss with olive oil & minced garlic, put into a grill bag, and grill. SO good!
    Looking forward to trying each of the techniques you posted too!
