Meal Plan Monday!

I’m going back to basics this week and taking my main Monday meal and breaking it down into itty bitty pieces by the end of the week. I miss doing this! I do it to an extent, but because of the change in weather, I just don’t think I can do too many big meals during the week. So, anything that needs to be cooked in the oven will be made on Monday. I’ll use the oven again on Friday for pizza, but that’s about it. Here we go!

Monday: Slow cooker beef brisket, collard greens, and yellow rice
Tuesday: turkey fried rice
Wednesday: beef brisket sandwiches with caramelized onions, broccoli and chex mix
Thursday: teriyaki beef and broccoli egg rolls
Friday: White pizza with caramelized onions
Saturday: Beef gravy and rice, with collard greens
Sunday: Leftovers night!

Dessert of the week: southern plate’s apple orchard snack cake, and my apple granola cookies
Bread of the week: rye bread…from the freezer :o)
Lunch of the week: apple slices, cheddar cheese and peanut butter with crackers! I love spring weather meals!

    Such a good idea! I almost always cook so that we have leftovers, and I will do a week of turkey dishes or a week of ham dishes around the holidays, but I rarely plan for those kinds of weeks the rest of the year. I should try to do so more often!

    Hi Annie! I love when you come to visit! Yes, I do the same thing and then realized, duh!, I have done my “week of the same” in over a year! I used to do it all the time when I first started to learn to cook, because, well, I only had a few meals that were idiot-proof for me. Now that it’s warmer, I need to get back to it.

    I love your blog!, And, I absolutely love that picture of the tiger lily. I love tiger lilies so much that I have a cat named TigerLily. No kidding…I should post a picture of her on my blog sometime. She is what they call a Maine Coon Cat…dunno what that is, but that is what the Humane Society said! Yeah for all things Tiger Lily — flower and cat! 🙂

    the white pizza sounds like a great idea. i’m not a big fan of tomatoes and i always forget that i can leave the tomato sauce off pizza

    I’m going to post a pic and quick recipe for white sauce next week. White pizza is a bit different from what you’re describing. If you do no sauce at all, it’s cheesy bread…which is just as delicious!
