Apple granola bread

Ok, let me start out by saying….this isn’t healthy. I know, I know, the name fools you, but it isn’t. Sorry. It’s a quick bread that really should be served as a dessert. Don’t serve it for breakfast. It’s too naughty for breakfast. And if you decided to disobey me and do serve it for breakfast, slicing it and warming it in a skillet will do you in. Putting a dollop of plain or vanilla Greek yogurt on it, once it’s done will also do you in. Be warned, my friends.

2 cups flour
1/4 cup quick or old fashioned oats
2 packets of apple cinnamon oatmeal(secret ingredient!)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
pinch of nutmeg
1 cup applesauce(I used homemade)
1/4 cup oil
1 cup sugar
2 eggs, slightly beaten
1/2 tsp. vanilla extract

Preheat your oven to 350 degrees.
Mix together the first 8 ingredients in a large bowl. Mix carefully! Put aside.
In another large bowl, mix applesauce, oil, and sugar on low. Once blended, add eggs and vanilla.
Slowly add flour/oatmeal mixture to the wet mixture, until it’s all in the wet mixture. Don’t over mix. Once the dry ingredients are wet, you are done.
Spray a loaf pan with cooking spray, pour the mixture in, and bake for 1 hour.
After an hour, place a toothpick or butter knife in the middle. If it comes out clean, it’s done. If not, give it another 10 to 15 minutes.

Optional ingredients: I call this granola bread because I like to add nuts, flax seeds, and sometimes dried cranberries to the recipe. If these are items that you want to add, you can do so by folding them in after the flour mixture is combined. But, the recipe is great as it is :o)

    it’s an ultimate apple recipe, so add the raisin spice oatmeal will inflict a different taste, of course. I’ve done it with maple brown sugar oatmeal, and it’s still yummy but of course tastes different. Try it out and let me know if it works!
