I have a craving for Chinese this week, so we’re going to have 2 meals with an Asian influence. Also, since we aren’t sure how the holiday weekend is going to go, I’m leaving saturday and sunday open, meal-wise. I can always put something quick together if our plans fall through.
Monday: Slow cooker Beef Brisket with mashed potatoes, caramelized onions and carrots
Tuesday: Penne ala Betsy(using greek yogurt thinned out instead of the heavy cream)
Wednesday: beef and broccoli egg rolls
Thursday: vegetable lo mein(like my asian spaghetti and meatballs recipe, but no meatballs :o)
Friday: Pizza night!
Saturday and Sunday are “free days” since we are invited out to different cook outs. If that falls through, we’ll have a grilled cheese and pasta salad night :o)
Bread of the week: Easy artisan
Dessert of the week: lemon yogurt cake

I’m a new convert to the wonders of both greek yogurt and The Pioneer Woman’s recipes but am still working on some of the basics in the kitchen. Would you share how you thin the greek yogurt to make a replacement for the heavy whipping cream in Penne ala Betsy? It looks so yummy, I’d love to give it try. TIA
