No-bake Key Lime Cheesecake

Like I hadn’t done enough no-bake desserts already. The choco-nana pie and yogurt pie are still causing a buzz on 4 hats, but I just had to hit ya with another one. I had a craving for my key lime cheesecake, but I sure as all hellfire wasn’t going to turn on the oven. I remembered I wrote down a quick no-bake cheesecake recipe a few years ago before hubby and I got married, so I went searching.

This recipe is uber-easy and once you have the main ingredients going, you can switch out the “extras” to make different types of cheesecake. I’ll explain a few at the end. For now, let’s just focus on key lime, baby.

No-bake Key Lime Cheesecake

1 graham cracker crust
1 8oz bar of cream cheese, room tempurature
1 tub whipped topping
1/2 cup powdered sugar
zest of one lime
juice of two limes
1/2 tsp lemon extract(or 1 tsp vanilla, if you don’t have lemon)

Place the cream cheese in a medium bowl.
With a handheld mixer, mix the cream cheese for about 2 minutes until smooth. Slowly add in the powdered sugar until all is combined.
Place the extract, zest and juice in the cream cheese mixture and briefly combine.
Take half of the whipped topping and stir together with the cream cheese mixture. No need to be gentle.
Now, take the second half of the whipped topping, and gently fold it into the cream cheese mixture, until combined.
Place the cheesecake mix into the graham cracker crust and smooth the top.
Place in the fridge for 4 hours to overnight or in the freezer for 2 hours(it’s heavenly right from the freezer on a hot day).

*There are many ways to change up the flavors here. For a regular vanilla cheesecake, use vanilla extract, replace the zest with a packet of vanilla pudding, and replace the juice with2 tablespoons of milk.

For banana, use banana pudding, milk instead of juice, and place sliced bananas on the bottom.

For chocolate, you know i’m always a fan of hot chocolate packets. Use vanilla extract and cold brewed coffee instead of juice.

And remember, the vanilla cheesecake can always be topped with berries of any kind. Hope you all enjoy!

    Not only does that look delish, but with my current calorie focus, I don’t think I’d feel guilty making it. I could use fat-free cream cheese and fat/sugar-free whipped topping.

    Big Guy has lately been quite morose over the dearth of desserts. Now I have a good solution!

    spaghetti, no way was that slice yours! I ate it for breakfast this morning after I took the pic lol. I KNOW you can make this at home, you little cook :o)

    I’m getting into a cooking frenzy (or trying to at least). Been DVRing the food network shows (Rachel ray, paula deen and sandra lee). Some good/easy recipes..my only snag is DH…a lot are healthy and he’s like ‘ew’ well, I’ll make it and he can watch me eat healthy and he has cereal LOL
