Since I roasted a Chicken for our dinner saturday night, we have a good amount of chicken left to use this week. *sigh* I love roasting chickens! Anyway, we will be using it in a few meals this week.
Monday: Mexican corn soup with cornbread
Tuesday: Faux crab cakes with garlic green beans and homemade rice pilaf
Wednesday: Chicken fried rice
Thursday: Wild Card Day! Hubby has class, so maybe grilled cheese, maybe leftovers….
Friday: Chicken Parmesan with pasta and side salad(no pizza! I know, shocking….)
Saturday: Hubby is best man at a wedding and I have babysitting duty, so no dinner at home
Sunday: Slow cooker beef and veggies served over orzo
Dessert of the Week: PW’s apple dumplings with vanilla ice cream
Snack of the week: Apple Chips
Bread of the week: Honey wheat
We love homemade fried rice! I learned from trial and error that the rice is best when cooked a day earlier! yum!
I love Mexican Chicken Soup! We add tortilla chips to our soup, as a topping.

Look, there are the faux crab cakes! I’m gonna have to try those.
Fried Rice? Especially YOUR fried rice? It’s much deliciouso (as Jenny would say). I made it the other night. Added boneless/skinless chicken, and a few flakes of red chili flakes for a bite.Then threw in a tad of the sesame/tamari marinade.
What can I say? This is the perfect recipe whether you eat it for breakfast or dinner at night.
