Yogurt Pancakes

Since there have been steady sales on yogurt at our stores, these have become a staple on saturday mornings here. They are easy to make, come out fluffy, and taste like heaven. Pancake mixes are easy but homemade is yum yum yummy!

Yogurt Pancakes

1 1/2 cups all purpose flour
1 teaspoon salt
2 tablespoons powdered sugar
1 3/4 teaspoons double acting baking powder
1 egg, slightly beaten
3 tablespoons melted butter or margarine
6 oz cup vanilla yogurt
3/4 cup milk

Combine flour, salt, powdered sugar and baking powder in a medium bowl. Toss together with a fork(you can sift if you want, but who has time for that on a saturday morning?).
In another bowl, combine yogurt and milk. Then, add the egg and mix together.
Add the wet products to the dry products and mix a few times. Then add in the butter and mix until all of the flour mixture is wet.
Let sit for a minute or two while you get the griddle ready.

Makes about 10 medium sized pancakes.

    Dear Dhunny – I know I only have the standard “Clabber Girl” baking powder – do you know if that’s the same as double-acting? I’m at work and wondering if I need to stop at the store, because these look so yummy, and my DH loves pancakes!
