This is our staple side dish for the fall and winter when apples are so abundant. It reminds me of the apple side that they serve at Boston Market. Pretty much every other week you can find this in our fridge and it works as a great side dish when we don’t just want veggies. How can you say no to yummy apples!
Cinnamon Apples
4 apples(peeled, cored, and sliced)
1 stick butter(or margarine)
3/4 cup sugar
1/2 tablespoon cinnamon
2 tablespoons honey
Melt the butter in a medium sized pot under low heat. In a separate bowl, place the sliced apples, the cinnamon and sugar. Toss until apples are fully coated with cinnamon and sugar. Add apple mixture to the pot with melted butter and turn to medium heat. Keep stirring the mixture so the apples are able to slowly caramelize and not burn. Once caramelized(apples will look golden brown), drizzle 2 tablespoons of honey on top of the apples and stir.

When I make this sort of thing, I save the peels and cores — then I whiz them up (in the Cuisinart) for the dog.
Actually, my pup gets an apple a day — but she gets the cheap bag kind, which aren’t so good for eating out of hand. But they work pretty well for recipes like this one.
So, save those cores and skin!!!

I chop apples and mix just cinnamon with them and bake them. They are just like the kids side dish at chilis and my kids LOVE them. No sugar or butter and they taste so good!

I make apple chips out of the skins and apple jelly out of the cores. So, as a real frugalite, I NEVER throw out things I can use for something else lol.
The recipe for apple chips is on the blog, and I’ll get the apple jelly up sometime this winter.
My husband just stopped in by the computer and saw the picture of your cinnamon apples. “OH WOW” I think I’ll be making them soon.
