Meal Plan Monday!

This is going to be a busy week! Thursday is not only Hubby’s birthday, but I also have to bring a thanksgiving dish to the kiddo’s school for their feast.  I’m going to make my sweet potato souffle for us and to take to the school.  Saturday, I’m surprising Hubby and taking him into Philadelphia to celebrate his birthday with our friends. I’m also making “special” pancakes on Tuesday and they will be part of a giveaway I’m doing in the near future! And…I have to try out the make ahead mashed potatoes again since I haven’t made them in a while and it’s on the list of items I have to make for our family’s thanksgiving feast next week. Busy, busy, busy!

Monday: Chicken Adobo with white rice and carrots
Tuesday: Breakfast for dinner! Pancakes and scrambled eggs with turkey bacon
Wednesday: No-fry mustard tenders with yellow rice and green peas
Thursday: slow cooker beef roast with make ahead mashed potatoes and garlicky green beans
Friday: Pizza night!
Saturday: Off to Philly for Hubby’s B-day celebration! We get to have genuine Philly Cheese Steaks…yum!
Sunday: Chicken and noodle casserole(yes, we STILL have chicken left over from last week!)

Dessert of the week: Hubby’s bday cake and sweet potato casserole(recipe coming soon)
Bread of the week: Honey Wheat

    Dhunny – A quick question I hope you can help me with….I got lots of the BC Scalloped/Au Gratin potato boxes on sale this week, and a friend asked me if she could use that with the soy milk her family drinks? We use regular milk, so I have no idea, but thought you might know. Also, I have some Eggland Q’s, but no Eggland eggs, can you use them?

    Many thanks! I sure miss school and scout and sports potlucks – they were great!

    I have no clue! I would assume so, since the soy milk manufacturers say that you can use the original(no flavor) soy milk in recipes, but we’ve never done it.

    I would love the egglands coupons! My address is on the google doc ;o)
