Easy Ginger Snaps

This recipe is for the moms or domestic divas out there that just don’t have the time to make “real” gingerbread cookies but want to have something with that homemade ginger flavor on their dessert table Christmas Eve. It’s also great because you use bagged cookie mix and if you dont have molasses, that’s OK! Brown sugar works out as a great substitute here.

Easy Ginger Snaps

Ingredients:

1 package sugar cookie mix
1/2 cup all purpose flour
1/4 cup melted butter
1/4 cup molasses or brown sugar
1 whole egg
1 tsp ground ginger
1/2 tsp ground cloves(optional)
1/2 tsp cinnamon
1/4 tsp nutmeg

Instructions:

Mix all ingredients and chill for 1 hour.
Roll out out thin (you’re making a “snap” cookie, remember?) and cut with round cookie cutters(I use 2 or 3 inch ones).
Bake for 8 minutes. Pull out of oven and leave on cookie sheet for a few minutes until they harden slightly, then you can move to a cooling rack.
For a more intense ginger flavor, you can mix a small amount of powdered sugar with a few teaspoons of ground ginger, and sprinkle on top of the cookies.
