I finally went through my freezer again and made a meal plan for about 2 weeks. Of course, there will probably be some good deals within that time so I can add a few meals to the list, but I love to do this from time to time just to see how far I can stretch what’s in my fridge and pantry right at this moment. You never know what could happen, as we’ve seen with the situation in Haiti, and it’s great to physically see on paper what you can accomplish with the stockpile of items you have on hand.
Monday: Slow cooker chili with pita chips for scooping
Tuesday: Peachy Chicken with green beans and rice pilaf
Wednesday: Spaghetti and meatballs!(We haven’t had this in so long!)
Thursday: Veggie fried rice(we forgot how great this is since we haven’t had it in a while)
Friday: Pizza night! I’ll top it with some leftover meatballs….yum!
Saturday: Southern Hospitality night! A yearly dinner party we have; Fried chicken, collard greens, baked macaroni and cheese, corn pudding, buttermilk biscuits, slow cooker peach cobbler and sour cream pound cake. The best part is that all of these, except for the chicken, can all be made ahead. Whoo Hoo!
Sunday: Taking all the leftovers from SH night to my parents’ house…there will be plenty :o)
