Since I created a “master” meal plan of all the meals I could possibly make with what I have in my stockpile, this week was easy to put together. I just looked at the list and typed what tickled my fancy.
Monday: Slow cooker fajitas with sour cream, cheddar cheese, lettuce, salsa and tortillas as the fixins
Tuesday: Chicken adobo with white rice and steamed broccoli
Wednesday: Baked ravioli(thanks to a sale on frozen ravioli last week!) with side salads
Thursday: Egg drop soup with homemade rolls
Friday: Pizza night! Maybe a Mexican one to use up the leftovers from Monday
Saturday: Grilled lamb chops with pan fried potatoes and sweet peas
Sunday: Leftovers…probably some type of potato cakes topped with leftover meats from the week
Dessert of the week: sour cream pound cake from Southern Hospitality night
I love my slow cooker! I am posting my healthy slow cooker recipes on my blog http://healthyslowcooking.wordpress.com. You might fine some that interest you.
Hey Kathy!
have you heard of the blog called “a year of crockpotting”? I love her site and she’s featured a few of my healthy crockpot meals. If you need any inspiration, you might want to check her out. Good luck with your blog!
I want fajitas too!
Off to search your site to see if I can find the recipe. If it’s not there can you please post. If it’s already there then, “Thanks”!
nope, its not. I just slice up chuck steaks, sprinkle with a fajita seasoning packet, top with 1/2 cup water, onions and sliced peppers. Cook on low for 8 hours.

My slow cooker has been out on loan and boy am I missing it! When we are at camp, we cook our frozen ravioli in it — do you? I just dump in a jar of sauce and a can of diced tomatoes, stir in the ravies and let it go for the afternoon.
And we enjoyed ravioli for dinner last night — we had it on sale too!
But for now, we’re slow cooking in the oven.
