I’m starting to wind down on the meal planning since my mind is becoming preoccupied with the baby coming a few weeks. Since I have meals all ready to go, I’ve been finding that I’ve been waiting until Monday to figure out what we’ll be having for the week. I usually have it done by saturday and have items defrosting in the fridge by saturday night. Hopefully this won’t be a trend that I adopt, but I’ll cut myself some slack lol. Here’s what I have in mind for this upcoming hot week:
Monday: Slow cooker chuck roast over potatoes with corn
Tuesday: Chicken cacciatore served over rice
Wednesday: Faux crab cakes with veggies(not sure which kind yet) and buttered noodles
Thursday: BLT sandwiches with chips and macerated strawberries
Friday: Pizza night!
Saturday: mmmm…..migas!
Sunday: Have to babysit my sister, so we’re going out to eat at the Diner
Dessert of the week: no clue! Don’t feel like baking, so we may just take advantage of the fresh fruit at the stores :o)
