Since we have less than 3 weeks until we’re on official “baby watch,” I’m trying to get in the favorites of Daddy and Sonny Boy while I still have time for them. Sonny has been begging for spaghetti for 2 weeks, so even though I think it’s way too hot for it, I’ll oblige. In order to conserve energy, anything that needs to be made in the oven(except the pizza) will all be made Wednesday when I make the fish. That’s basically Tuesday, Wednesday and Thursday’s meals. They all can be reheated in the microwave or toaster oven. I have to clear out that fridge for Sonny’s bday party. Should be an easy week!
Monday: Spaghetti with meat sauce(made with ground turkey)
Tuesday: Baked Bluefish with corn and rice
Wednesday: Teriyaki beef and rice lettuce wraps
Thursday: Cheesy Chicken casserole
Friday: Pizza night!
Saturday: Leftovers buffet
Sunday: Mom and Dad will be at a 12 hour class; Sonny Boy gets to eat at Grandma’s!
Dessert of the week: Banana Ice cream and Strawberry-apple cinnamon bread pudding

And I think it’s fun to make a cold spaghetti soup. I just water down the sauce with broth and add some veggies — almost like a gazpacho. I then add the cooled cooked spaghetti and serve it in a bowl. The colder the better. Lots of grated cheese on top!

Hey girl! I’ve been “out of the loop” for the past couple of months, so I’m catching up on blogs (including my own)! I knew your newest “frugal baby” was due in early summer- almost there! You’re gonna end up like me with 2 kids who have birthdays close together! (My younger daughter and my son’s birthdays are 2 weeks apart- makes for interesting gift and party planning!) 🙂 My Little Man is finally potty trained- woo-hoo… no more diapers around here- so I can send my diaper coupons your way from now on if you need them. And about your meal plan for this week- I make my spaghetti sauce in the crockpot during the summer so that way all I’ve got to really cook is the pasta.

Thanks Alex! That sounds like something hubby can make when he has cooking duty in a few weeks. Maybe we’ll practice it once so I know he won’t mess it up lol!
VA Mom! Yes, I saw your hiatus on your blog. I hope it was a good one for you! Yup, both my kiddos will have bdays close together. Don’t know how to feel about that lol. He was early, so sissy will probably be early too. She’s almost out of room in there! lol
