It’s rubber chicken week! I love when we can roast a chicken and get it in all of our meals all week. It saves me so much time and headache. It’s also going to be Sonny’s first full week of school, so it’s time to start making him some after school snacks. This is what I have in mind for this week:
Monday: Roasted chicken with roasted carrots and brown rice
Tuesday: Teriyaki Chicken fried rice with side salad
Wednesday: Turkey Meatloaf with mashed potatoes and broccoli
Thursday: Matzo ball soup with mini homemade rolls
Friday: Pizza night! Topped with chicken, peppers, and onions
Saturday: Leftovers night! Mom and Dad will be off to Philly for the night, so a quick meal is needed
Sunday: Dinner at my Parents’ house. I may make enchilada bake with chicken and take it over there
Dessert of the week: Banana pudding (if we have bananas left by mid week)
Snack of the week: Apple chips
