This weekend, we went to an apple orchard with the kids and stocked up on some yummy apples. We even got a few pumpkins to decorate next weekend before Halloween. So, of course I have to make an apple dessert this week, and I’m even going to make some apple jelly with all the leftovers. I also purchased 2 beef roasts last week and they are each in a slow cooker as we speak right now. One will be used twice this week and the other will be shredded and turned into 3 meals that hubby will use when I leave. Yup, its time to stockpile meals!
Monday: Slow cooker Pot roast served over orzo with buttered corn
Tuesday: Breakfast for dinner: apple cinnamon pancakes, turkey bacon, scrambled eggs and orange juice
Wednesday: Beef and cheese quesadillas with side salad
Thursday: Chicken and green bean stove top casserole served over brown rice
Friday: Pizza night!
Saturday and Sunday: Off to drill weekend so Dad and the kids will have leftovers 🙂
