I don’t even know why I’m dedicating a whole post to these, because they are just so super easy! I lucked out when my ShopRite has slider rolls on clearance a few weeks back. I grabbed 4 packs, used 2 to make mini sandwiches for Girls night In at my Mom’s house and I used the other 2 to make these. They are perfect for busy mornings or those summer days when it’s already hot as soon as you wake up. Just pop a frozen into the microwave for 1 minute and they are fully cooked.
These were the fixings. I had a spare slice of American cheese, so I threw that in. The Mexican blend cheese is a great addition to this sandwich.
I lined my cookie sheet with wax paper and laid out the bottoms of 12 buns.
I then placed the cheese on top of the bottom part of the bun. I find that the cheese fairs better in a breakfast sandwich when it’s placed on the bottom. When you reheat them, the cheese doesn’t taste mealy and is rather gooey. Trust me on this one.
I scrambled the whole dozen eggs and added in a splash or two of milk. Half of the egg mixture was placed on top of the 12 bun bottoms, and the other half was saved for the next batch. If you would like to add bacon or sausage to this, you can place it in between the eggs and cheese.
Just a random close-up of the sandwiches. Slurp. Gulp. Yum.
I topped them with the top part of the bun and placed the cookie sheet in the freezer. After about 2 hours, they were hard as a rock. I placed them in these freezer bags. Whenever we have a busy morning (or are running all kinds of late), I can pop 2 of these in the microwave for 2 minutes and have an instant breakfast for the kids.
And that’s it! If you can’t get a good deal on slider rolls, hamburger rolls work great as well.

Ahhh so good. I HATE frozen breakfast sandwiches. Real ones are so much better. I like to make mine fresh with english muffins, ham, cheese and that’s it. So simple. Sometimes hot sauce!
