Autumn is trying to show it’s face to us this week, and it was just my luck that roaster chickens were on sale last week at my local grocery store. I take this as a sign from the heavens above. The roasted chicken is a favorite meal among the frugal savvy crowd; it’s easy to make and yields a bunch of extra meat to last a few more meals during the week. You not only stretch a dollar, but you stretch the heck out of that chicken.
We’ll be implementing our Rubber Chicken game plan this week(remember that post? It was a good one), and I’m hoping to have enough chicken left at the end to freeze for a quick meal later in the week. In honor of our rubber chicken, I’ll have a video of a new recipe posting this week. It’s my first recipe that I did as a video, and I’m excited to share it with you.
