I’m not a good gravy maker. As a matter of fact, I stink horribly at gravy. Year after year, I’ve gotten a bit better, but it still comes out with flour chunks and weird flavors. Help me, Rhonda.
Thankfully, I’ve watched enough Food Network and Top Chef to figure out how to get around making a gravy. I kick but at making a thin sauce full of flavor, or a fantastic Au Jus. But when I can’t get around making a gravy, like on Thanksgiving, here are a few tips I use:
Doctor up the canned stuff. I see no problem with using canned gravy. It’s cheap and once you put in a few add-ons, it’s taste is heavenly. Since it’s full of sodium, I tend to not add anymore salt. I’ll take the juices from the roasted meat and add it to the gravy. Adding in fresh, or even dried, herbs can also take it over the top.
My blender or food processor gets a workout. If I decide to try my hand at making my gravy and it gets lumpy (which it always does), I throw that baby in the blender. It makes it very smooth and silky, just like gravy is supposed to be. I’ll taste for seasoning, then serve. Simple!
