Grilling season is in full swing and I couldn’t be happier. Why? Because I place my dear husband in front of his charcoal grill, armed with a boatload of food, and let him do the cooking. On the best weekend, he could grill enough food for us to eat for the rest of the coming week. And then the angels sang, Hallelujah! So when our meal from eMeals included this recipe for grilled pineapple turkey burgers, I got so excited. This ensured yet another meal I didn’t have to fuss with, except for the prep and making the side dish.
This pineapple turkey burgers recipe created some of the juiciest turkey burgers we’ve ever had. The special sauce also surprised us with it’s tang and ease of creation. The grilled pineapple provided a smoky sweetness that we usually get from a few squirts of ketchup. No ketchup needed this time! I did switch around the recipe a bit to have it fit how I cook (we chopped up frozen sweet peppers, instead of fresh, for extra moisture) and what we had in our pantry already (substituting yellow onion for green onion). Grilled Pineapple Turkey Burgers
1 1/2lb ground turkey
3/4 cup dry breadcrumbs
1/2 cup diced bell peppers (we chopped our frozen peppers in the food processor)
1/2 cup diced yellow onion (chopped in the food processor)
1/2 teaspoon ground ginger
1/4 cup pineapple juice (from 20oz can pineapples)
1 (20oz) can sliced pineapple rings, not drained
6 slices Swiss cheese
6 teaspoons mayonaise
2 teaspoons teriyaki sauce (or combine 1/2 teaspoon soy sauce, 1 teaspoon brown sugar and a splash of pineapple juice)
6 hamburger buns
Instructions:
Combine ground turkey, breadcrumbs, peppers, onions, ground ginger and pineapple juice in a large mixing bowl.
Make 6 equal size patties.
Grill over medium heat for 6 minutes on each side, or until cooked through.
Place pineapple rings on the grill to brown slightly on each side near the end of grilling the burgers.
Place a slice of swiss cheese over each patty and let melt.
Combine mayonnaise and teriyaki sauce, spread on the bottom half of each bun.
Place burger and pineapple ring on each bun half.
Cover with bun tops, serve and enjoy.
