I am the proud wife of a man that loves stuffing. Each Thanksgiving, he gets so excited about his favorite side dish. While he loves to have stuffing on turkey day, he very much enjoys a few scoops of Stove Top stuffing with our Thanksgiving leftovers. He’s had it on a turkey sandwich and even just on a small plate, drizzled with gravy. This year, we’re taking it up a notch. This holiday season, we plan to enjoy thanksgiving leftovers soup.

In full disclosure, I’ve thought about this creation since last Thanksgiving. I remember scooping some Stove Top onto a Thanksgiving plate, and thought that it looked like a scoop of coffee ice cream. Then, I imagined that delectable scoop of stuffing in a beautiful white bowl. Then, I imagined drizzling gravy over it, like you would drizzle caramel sauce over ice cream. THEN! I drooled. The end.

We found Stove Top stuffing the in pasta and soup aisle of our local Walmart.

Seriously, I couldn’t wait until Thanksgiving rolled around again so we could grab some Stove Top from Walmart, and try this. The results are in and everyone in the family has decided this will be our go-to meal for Thanksgiving leftovers this year.

This “recipe” uses up your leftover gravy, turkey meat, vegetables, and of course, Stove Top stuffing. Once you serve it up, top with chopped parsley, or even dried thyme. Here are the steps:

  1. In a medium saucepan, add 2 cups leftover gravy, one cup of chicken or turkey broth, and leftover thanksgiving vegetables (we have sautéed corn and onions, and sautéed carrots). Bring to boil, then let simmer for 5 to 10 minutes.
  2. Place a scoop of leftover Stove Top stuffing in a bowl. Warm in the microwave oven for 2 minutes.
  3. Stir the soup mixture, and add salt and pepper to taste. Take off the heat.
  4. Ladle the soup mixture over your Stove Top stuffing. Sprinkle with chopped fresh parsley, or dried thyme.
  5. Enjoy!

What a great way to use up the leftovers. I will try that at Christmas when our son comes down to spend the holiday with us. He adores stuffing and will really enjoy your dish.
