Lemon Meringue Pie is one of my favorite desserts in the whole wide world. I love the airy meringue topping, and the tartness of the lemon filling. This may be why I will stay up at night and eat spoonfuls of lemon curd from time to time.
One night, I was rummaging through the kitchen, and decided that I wanted to take my midnight snack to the next level. This is how lemon meringue bites were invented. The ritz crackers were readily available, and we happened to have marshmallow cream on deck. It was go time.
These are very easy to make. The best part is that you can make them 3 different ways. Check it out:
The basic bite starts with 2 crackers and a dollop of both spreads.
First you spread on your lemon curd.
Then you spread on your marshmallow cream.
Then you sandwich them together. Boom. A delicious treat.
Or, you can take it to the next level, and meringue that joint.
Place lemon curd on one cracker, then cover it with another.
Then, on top of the lemon curd sandwich, place a very large dollop of marshmallow cream.
Then do this. Yes, get out that brûlée torch you got as a wedding present, and use it right on the cream.
Oh yes. Yes, it really is as good as it looks. Try it tonight when you get up for your midnight snack, or serve it to guests as a fun little summertime dessert. Your choice.

Honey Ritz needs to put you on the team! These look delicious and I don’t think I know anyone that can do more with a Ritz cracker than you! I already know that lemon cur with marshmallow creme is heaven. Genius!
Oh boy do these ever look yummy. I’ve eaten graham cracker with marshmallow cream and peanut butter, but I’ve never tried lemon curd and marshmallow cream. This is going on my list to get at the store. Yum!
AH! I can have to figure out to make this so I can eat it. Gluten free crackers, rice mallow fluff and maybe some homemade lemon curd? MUST HAVE.
