When it comes to an easy meal, you have to love a frittata. It took our family a while to discover how awesome and simple a frittata is, but once we did, we were hooked. The best part of a frittata is that you can fill it with anything you want. So, what did we fill ours with? Turkey sausage. This turkey sausage and spinach frittata is now a family favorite, and the best part is that it can be made for breakfast, lunch (our favorite), or dinner.

This recipe has just a few ingredients. Eggs, milk, fresh spinach, butter, olive oil, and Johnsonville Original Recipe Fully Cooked Breakfast Patties. The patties have so much flavor, you don’t need much else. I did add salt and pepper to the scrambled egg and milk mixture, though. For good measure.

Chop up your Turkey Sausage Breakfast Patties into bite size pieces.

Place oil and butter in your skillet. You can use a nonstick skillet, if you would like. I live on the wild side and use my stainless steel skillet.

Once the butter is melted, sauté the spinach. It doesn’t have to be fully cooked, since it will cook more within the frittata.

Add your chopped breakfast patties. These are already fully cooked, so all you’re doing is warming them up, and incorporating them into the spinach.

Pour the scrambled eggs over the sausage mixture, and cook over medium to low heat until the eggs are set.

See how that side of the frittata is set? This is a good time to put a top on the frittata and let it cook a bit more. Once you see that there is less liquid on the top of the frittata, you can turn the heat completely off and let it fully set with the residual heat. Cover your meal and let it continue to cook all on it’s own? Now that’s easy.

Once the frittata is fully set on top, it’s ready to slice and eat! For breakfast, you can pair it with sliced apples or fresh berries. For lunch or dinner, we pair it with a small salad. Since there are 3 sources of protein in this meal (spinach has protein in it!), you can pair it with just about any fruit or veggie that you want.

I love that we can use Johnsonville Fully Cooked Breakfast Patties to make a meal that can be eaten anytime of day, not just in the morning. This Turkey Sausage and Spinach Frittata is too good!

Turkey Sausage and Spinach Frittata

serves 4

Ingredients
6 eggs
1/4 cup milk
Salt and pepper
1 tsp butter
2 tsp olive oil
1 cup fresh spinach
Johnsonville Fully Cooked Turkey Sausage Breakfast Patties, chopped

Instructions
In a medium bowl, beat eggs, milk, salt and pepper. Set aside.
Heat butter and oil in a 6 to 8 inch nonstick omelet pan or skillet over medium heat, until the butter is melted.
Add spinach to the pan, and lightly sauté.
Add chopped sausage, and stir together, about 30 seconds. Spread out the mixture to fit the bottom of the pan.
Slowly pour the egg mixture into the pan; cook over medium-low heat, until the eggs are almost set.
Once the eggs are almost set, cover pan, turn off heat, and let the frittata continue to cook until the top is fully set.
Serve immediately, and enjoy.
