Family Fellowship Time

For our last Fellowship Sunday before our big move, we wanted to do something special. We partnered with ALDI to serve up one of the most fun barbecues and ice cream socials our guests have ever had.

Oh, and the star of the party was the easiest ice cream cake you could ever make. Don’t worry, I’ll share that recipe in this post. I got you covered.

Because we don’t entertain lightly, we made sure everything we served that day was from my once a month grocery shopping at ALDI. From the sweet potato chips, to the burger buns, we did it up.

When we told our guests that everything was from ALDI, they were really impressed. “It looks so fancy!” was the common phrase of the day.

Build Your Own Ice Cream Sundae

We set up a “build your own sundae” display. I made homemade strawberry syrup, homemade pineapple syrup, fudge sauce, and offered cherry filling as a topping, too. Chopped walnuts, cookie crumbles, and pineapple chunks were all from ALDI, too.

I even offered made-to-order ice cream sodas as an option. The ice cream made the sodas so delectable. Many guests asked for seconds!

How To Make An Ice Cream Soda

The ice cream sodas were super simple to make: 1 scoop of vanilla ice cream, a long drizzle of strawberry or pineapple syrup, and topped with sparkling lemonade. The guests could choose from regular lemonade or pink lemonade. And yes, that fancy bottled lemonade is from ALDI.

How To Make An Ice Cream Cake

And now…the ice cream cake. This was so simple to make. Layer 2 cups of chocolate ice cream, 2 cups of cookie crumbles, and 2 1/2 cups of vanilla ice cream. I used my springform pan, but you can totally make this in a casserole dish.

Here’s the thing: you have to let each layer freeze on it’s own. The bottom layer is the biggest culprit to a crappy ice cream cake. Let that baby freeze for at least 4 hours. So, you’ll need to put this together the day before your event, but it’s worth it. WORTH IT.

You also need to use quality ice cream. Hence the use of Specially Selected Super Premium Ice Cream from ALDI. Booyah.

Ice Cream Social guests

We had an amazing time at the ice cream social. We fed over 20 people and spent less than 180 dollars for EVERYTHING, including all the delicious things we grilled for dinner. Everyone left with smiles on their faces, and to-go plates. That’s what we always want to accomplish during Fellowship Sunday. The ice cream social, and the ice cream, made this so much more special.

Easy Ice Cream Cake

8 servings

Ingredients
2 cups ALDI Specially Selected Super Premium chocolate ice cream, slightly melted
2 cups roughly chopped chocolate sandwich cream cookies
2 1/2 cups ALDI Specially Selected Super Premium vanilla ice cream, slightly melted.
Plastic wrap (if using a springform pan)

Instructions
Remove your chocolate ice cream from the freezer, and let sit for half an hour.
Line the bottom and sides of your springform pan with plastic wrap. If using a casserole dish, this step isn’t necessary.
Take your slightly melted chocolate ice cream, and mix together in a stand mixer, or with a handheld mixer, for 2 minutes. The ice cream should be still frozen, but spreadable.
Spread the chocolate ice cream on the bottom of your prepared springform pan.
Let the first layer freeze for 4 hours.
About 3 1/2 hours into the freezing of the first layer, take out the vanilla ice cream and let it soften for half an hour.
After half an hour, place slightly melted vanilla ice cream in a stand mixer or in a bowl with a handheld mixer,  and mix for 2 minutes. The ice cream should be still frozen, but spreadable.
Take cookie crumbs and place on top of the frozen chocolate layer. Make sure the layer is even and patted down.
Top cookie layer with melted vanilla ice cream. Top layer with plastic wrap, and place in the freezer. Let freeze for 3 to 4 hours.
When serving, warm up your knife with hot water, and slice away. Serve immediately and enjoy!

    You can never go wrong with ice cream in any form for summer but I really love how easy this ice cream cake is to make! Literally 3 ingredients and a springform pan?!?
