Easy Chicken Sheet Pan Dinner

There are those times when you open the fridge and freezer, take inventory of what’s still available, and you just happen to create awesomeness. This easy chicken sheet pan dinner is our current awesome recipe. Sheet pan dinners aren’t anything new to our family, mostly because I’m always looking for the easiest way to feed our brood. But this recipe? It was almost too easy.

With chicken as the star, and carrots, Brussels sprouts and yellow potatoes as the back-up singers, everyone will find something that they love on that sheet pan. Yes, even the Brussels sprouts. We currently have 2 kids that will eat them, 1 that enjoys them, and 2 parents that will eat them with scrambled eggs for breakfast.  I also love that I can make this sheet pan, wrap with plastic wrap, and have it ready to go any night of the week. All you have to do is remove it from the fridge while the oven is preheating, and it will be ready to bake. It’s a 30 minutes meal that just can’t go wrong. We hope you enjoy it!

Easy Chicken Sheet Pan Dinner

Ingredients
2 pounds yellow potatoes, cut into 1 inches pieces
16oz brussel sprouts
1 pound baby carrots
2 pounds chicken breasts, cut into 1 inch pieces
1/4 cup olive oil
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 teaspoon onion powder

Instructions
Preheat oven to 400 degrees.
Place chicken and vegetables on sheet pan. You may line it with foil for easy clean-up, or use this pan (no lining needed).
Top chicken and vegetables with olive oil, herbs and spices. Toss to coat.
Place pan in oven, and bake for 30 minutes.
Remove from oven, and let sit for 5 minutes.
Serve and enjoy!

    Love how simple this is. Why have I never thought of prepping the pan in advance? I think I’ve also always worried about cooking everything together. But this is perfect!

      Yes! You can also place all of the ingredients in a storage bag, if you don’t want to take up space in your fridge. Just imagine 3 or 4 bogs of sheet pan dinners, ready to go! Life changing!

      The chicken is raw. It roasts with the veggies!
