Instant Pot beef stew is one of our favorite fall meals. We’ve only had our Instant Pot for a year and a half, but we’ve defaulted to Instant Pot beef stew more times than I want to admit. I’ve tried a few simple instant pot beef stew recipes, but this one was created out our our family’s preferences, food budget, and lack of time.
Let’s keep it real: one of the main reasons I love making this simple Instant Pot beef stew is the smell. Making beef stew in the slow cooker was always amazing, but I have to smell it ALL DAY. The torture! Making beef stew in the Instant Pot means I get a tease for less than an hour, and my salivation is minimal. I can dig it. Without further ado, here is our recipe for simple Instant Pot beef stew.
Instant Pot Beef Stew
Ingredients
2 1/2 pounds chuck roast, cut into bite sized pieces (or 2 1/2 pounds beef stew meat)
2 tablespoons vegetable oil
1 teaspoon kosher salt
1 teaspoon seasoned salt
1/2 teaspoon pepper
1/2 tablespoon all purpose flour
1 tablespoon minced garlic
1/2 cup water
1 large onion, cut into 1 inch pieces
16 ounces baby carrots
2 pounds yellow potatoes, cut into bite sized pieces
Instructions
Place Instant Pot on sauté, and add vegetable oil.
Brown bite-sized pieces of beef, in 3 batches.
During the 3rd batch of browning, add flour and stir together. Add minced garlic, kosher salt, seasoned salt, and pepper. Stir for 30 seconds. Add chopped onion, and stir.
Add water, place lid on Instant Pot, and cook on manual high setting for 30 minutes.
Perform a natural release. Add potatoes and carrots, and place Instant Pot on manual high setting for 7 minutes.
Once finished, you can do quick release or manual release (if you’re busy running after kids).
