Genius Ways To Use Carrots
Carrots are an affordable fridge staple for any family on a budget. There are so many ways to incorporate carrots into your meal plan, and believe me, our family has done them all. There are so many genius ways to use carrots, especially when you can get a great deal on the large bags of these delicious vegetables. Here are some of our favorite ways to use carrots.
Carrots As A Soup
As soon as there’s a chill in the air, I’m all about making soup. Cream of carrot soup is one of my favorites to make and to eat in the fall and winter. It uses up carrots in a great way, and you can either roast the carrots first, or simply boil them.
In A Stock
Carrots add a richness to any soup stock you make for the colder seasons. Since they are so inexpensive, using carrots and onions in your stock is an all-around genius idea. I save carrots tops to use in my vegetable or chicken stock, to stretch my purchase even more.
A Cool Side Dish
Yes, carrots is a typical side dish for your weeknight dinners, but have you ever mashed them? Mashed carrots is a family favorite around here, because I add a drizzle of olive oil to the top. Again, roasted carrots would make this side dish even more lovely, but it’s not necessary.
As A Dip

As A Noodle
Zucchini used as noodles is all the rage right now, but carrots can easily fit that bill. We turn our carrots into noodles for recipes like homemade hamburger helper and Asian spaghetti and noodles. You don’t need any fancy tools to turn your carrots into noodles; use your vegetable peeler!
