This is an easy Valentine’s recipe that the kids can make themselves for their friends. Or, you can make them the night before Valentine’s Day, and serve them as a fun breakfast treat.

Here are the steps to make white chocolate dipped banana sandwich cookies.
How To Make Banana Sandwich Cookies for Valentine’s Day
The ingredients are simple: bananas, white chocolate chips, red sprinkles or crushed candy, and Voortman Bakery Strawberry & Banana wafers. We chose to use Voortman wafers because they make them with real fruit, no artificial colors, and no high fructose corn syrup. So, yeah, I can totally give these sandwich cookies to the kids for breakfast.
Place 3 slices of banana on top of two wafer cookies.
Melt one cup of white chocolate chips in a microwave safe bowl. Spoon the chocolate over one half of the banana sandwich cookies.
Place dipped sandwich cookies on wax paper. Once all cookies are dipped, sprinkle the top with red or pink sprinkles. Place wax paper with cookies on a large plate, and put into the fridge to let the chocolate set. It should take about an hour.

Banana Sandwich Cookies

Ingredients:
36 Voortman Bakery Banana & Strawberry wafer cookies
1 banana, cut into 24 slices
1 cup white chocolate chips
Red or pink sprinkles
Instructions:
Cut banana into slices.
Place 3 banana slices on top of 2 wafer cookies. Top with two wafer cookies. Repeat until you create 8 banana sandwich cookies.
Melt white chocolate in a small microwave safe dish. With a spoon, pour white chocolate over half of each of the banana sandwich cookies.
Put a large piece of wax paper on a large plate. Place dipped sandwich cookie on wax paper. Once all cookies are dipped, put large plate in the fridge. Allow chocolate to set for at least one hour.
Once chocolate is set, serve immediately or store for up to 3 days.
