Spicy Chipotle Chicken Pasta – Cheesecake Factory Copycat

Confession: my husband and I LOVE The Cheesecake Factory. This Instant Pot spicy chipotle chicken pasta recipe resembles the Cheesecake factory meal we always talk about at home.

So, when I was able to create this chipotle chicken pasta recipe, and have it taste like the one from the restaurant, I was filled with joy.

Cheesecake Factory’s Chipotle Chicken Pasta Is Way Famous

If you haven’t tried this meal, you totally need to give it a go. I’m not that big on spicy food, but there is something about the blending of the ingredients in this dish.

The cream with the adobo sauce and the use of a bright veggie like asparagus, makes this a hearty meal that the whole family with enjoy. Making it in the Instant Pot is just a bonus.

Keeping It Real – There Are Lots Of Ingredients

OK, here’s the deal. This Instant Pot recipe might not look like a frugal meal because of all the ingredients. But, if you look down the list, most of these things are already in your pantry. 

The only things you may need to grab from the grocery store are the parmesan cheese, heavy cream, and asparagus. Be sure to check the full list of ingredients before you start cooking.

When we have the spicy chicken chipotle pasta at Cheesecake Factory, we always have a take-home box. It’s a lot of food! This recipe won’t be any different. Plan to make this as your big weekend meal, or save some for lunch the next day.

We love to call dinners like this “belly buster meals.” It reminds me of the homemade hamburger helper recipe we have on the blog. It’s a cheap way to get a full belly.

Instant Pot Spicy Chipotle Chicken Pasta from Cheesecake Factory

serves 4 to 6

Ingredients:
2 packets of Perdue Farms Harvestland diced chicken breasts
1 box of penne pasta
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsp. butter
2 tbsp. olive oil
1/4 cup honey
3 tbsp. chipotle pepper sauce from canned adobo peppers
1 yellow bell pepper, diced
1 red bell pepper, diced
1/2 yellow onion, diced
1 tbs. minced garlic
2 cups heavy cream
1 cup frozen peas
1 pound fresh thin asparagus, chopped into 1/4ths
6 oz shredded parmesan cheese

Instructions:
Press the saute button and then press the adjust button to set saute to “less”.
In a bowl add your chicken add the lemon juice, salt and pepper and
let sit as you cook the rest of the dish.
Once it displays hot, add the butter and melt.
Add the bell peppers and onions and cook until just translucent.
Add your garlic and toss to combine.
Remove pepper mixture and set to the side.
Now add your olive oil.
Add the chicken to the pan and brown the chicken on both sides.
Add in the honey and stir, cooking an additional 5 seconds.
Remove the chicken mixture and set to the side.
Add 1 1/2 cups of water to the Instant pot.
Now add 8 oz penne pasta, 2 tbsp. of adobo sauce, chopped asparagus .
Do not stir especially if your Instant Pot model gives the BURN message.
Close the pot with its lid.
Press the manual or pressure cook button and cook on high pressure for
5 minutes.
Quick release the pressure by manually moving (be careful) the
pressure valve from sealing to venting position.
Open the pot, add the chicken mixture, and stir everything together.
Press the saute button.
Add in the heavy cream, and parmesan cheese and stir.
